1st Gluten Free Birthday
Our girlie turned 11 yesterday!! It’s her first birthday since her celiac diagnosis, so we are still navigating the best way to do things. We celebrated with family over the weekend with pizza and an amazing gluten free chocolate-cherry birthday cake (recipe and pics coming!) In 2 weeks we’ll be hosting her friend birthday party, so I’ll also share details about that afterwards.
Our family birthday tradition since the kids were little has always been to make a roll of Pillsbury cinnamon rolls and bake them in the shape of the kid’s age. I knew that we didn’t have a good cinnamon roll substitute so after a little brainstorming, we decided to do something similar with gluten free pancake donuts! We used our favorite King Arthur Gluten Free Pancake Mix with a little food coloring and chocolate chips. Once they were baked, I arranged them on a cookie sheet in the number 11 for her and she loved it! When she ate them, I added whipped cream and a cherry to each one, along with some delicious bacon. She told us she liked this even better than cinnamon rolls. Looks like we have a new birthday tradition started!
